Now, if you don't have watermelon pickles for this recipe, feel free to substitute sweet dill pickles for a close second, but nothing beats homemade watermelon pickles! There is nothing better than the smell of freshly baked bread wafting throughout the house. And the taste is right up there as well! However, bread-making takes quite a bit of work and so most weeks I find a compromise...utilizing my bread machine's "Dough" setting and letting it do the majority of the work for me. I am not a fan of the shape of loaves baked in bread machines, so my work-around is to use the dough setting for the kneading and then I will remove the dough, shape it as desired, and bake in a regular pan in the oven. I do this for most of my bread recipes and I'm rather hooked on the process. Anyone who knows me, knows how much I love winter, especially snow! I get plenty of grief for that attitude here in the Midwest, trust me! However, even this snow princess still begins dreaming of warm sunny beaches by the end of February. The best way to daydream of sunshine and summertime? Sipping on this classic Cuban drink...the fantabulous mojito! A mojito is one of the simplest drinks that you can mix up in your kitchen. I personally always have mint plants growing, whether in my office window during the winter, or out in the herb garden in the summer. So when I have a craving for this minty-fresh drink, I simply pluck a few fresh sprigs and I am good to go. Enjoy!
